The White Tuna (Albacore) or "Thunnus Alalunga" is captured, one by one, in the Gulf of Biscay and in the best moment of the season respecting the traditional fishing tackle. Because its aroma, its refined taste, its smooth white meat and its properties, White Tuna (Albacore) composes the elitist range of the tuna fish. Once we have selected the best fishes, we cooked them and, following a meticulous and handmade process, the White Tuna (Albacore) is prepared and packaged. The skill and experience acquired over five generations is the key of the exceptional taste and appearance of our preserves."Serrats" Preserves only use Anchovies of the finest quality "Engraulis Encrasicholus" captured in the best moment of the season, between April and June, in the Bay of Biscay. Our Anchovies are notable for being elaborated by means of a meticulous and handmade process, very similar to salted Anchovies, which maintains the original characteristics of the Anchovies. Because of its meat and aromatic flavour, our Anchovies fillets are a delicacy.
Finally, for both the White Tuna (Albacore) and Anchovies from the Bay of Biscay, we add distinct coverings: specially slected olive oil, our traditional pickling sauce, olive oil with piquillo peppers, etc. These coverings, with their intense flavours add an aroma and unique sabor to preserves from Conservas Serrats.
The “Small” Gift Box highlights by combining different preserves of White Tuna (Albacore) loins, "Ventresca", and Anchovies from the Bay of Biscay of magnificent quality. Preserves elaborated artisanally, always using fresh fish, that uses the “know how” obtained over five generations.
