En <a href=\"https:\/\/www.serrats.com\">Conservas Serrats<\/a> solo utilizamos la <strong>\u201cEngraulis Encrasicholus\u00bb<\/strong>, la de <strong>m\u00e1s alta calidad.<\/strong><\/p>\n<p>Nuestra anchoa ha sido pescada por la flota de bajura en el Cant\u00e1brico entre los meses de abril y junio, cuando est\u00e1 en su punto \u00f3ptimo de grasa y sabor.<\/p>\n<h2>Elaboraci\u00f3n artesanal<\/h2>\n<p>Adem\u00e1s, en Serrats elaboramos nuestras conservas de anchoa del Cant\u00e1brico a trav\u00e9s de un <a href=\"https:\/\/www.serrats.com\/es\/proceso-salazon-fileteado-conservacion-anchoas\">proceso artesanal<\/a>, pr\u00e1cticamente igual que c\u00f3mo lo hac\u00edamos en nuestros or\u00edgenes.<\/p>\n<p>Empezamos por quitarles tripa y cabeza, y a continuaci\u00f3n vamos colocando las anchoas en barricas entre capas de sal, donde las dejamos\u00a0madurar unos 7 meses. Cuando est\u00e1n listas, las limpiamos y secamos perfectamente una a una y las cubrimos con un seleccionado aceite de oliva de sabor suave.
