Adem\u00e1s, al menos una de ellas debe ser de pescado azul. Pero, \u00bfsabemos <strong>distinguir entre un pescado \u201cblanco\u201d y\u00a0 uno \u201cazul\u201d<\/strong>?<\/p>\n<p>La principal diferencia entre ambos es<strong> su contenido en grasas<\/strong>.\u00a0El pescado blanco apenas tiene grasa (entre un 0.1% y un 2%); sin embargo,<strong> el pescado azul contiene entre un 8 y un 15% de materia grasa<\/strong>;<strong>\u00a0<\/strong>pero se trata de<strong> grasa saludable.<\/strong><\/p>\n<p>La grasa que aportan los <strong>pescados azules<\/strong> son insaturadas, entre ellas el <strong>Omega 3<\/strong>, aconsejado para cuidar el coraz\u00f3n, reducir el nivel de colesterol y triglic\u00e9ridos de la sangre, regular la tensi\u00f3n arterial, prevenir enfermedades degenerativas&#8230; Adem\u00e1s, los \u00e1cidos grasos Omega 3 tambi\u00e9n son considerados potentes anti-inflamatorios.\u00a0Nuestro organismo no produce por s\u00ed mismo este tipo de \u00e1cidos grasos, por lo que debe obtenerlos a trav\u00e9s de la dieta.<\/p>\n<p>La raz\u00f3n por la que unas especies de pescado acumulan m\u00e1s grasa en su cuerpo que otras es por pura supervivencia: las que tienen m\u00e1s grasas en su organismo son las que necesitan m\u00e1s energ\u00eda en determinados momentos de su ciclo de vida, como cuando tienen que enfrentarse a largas migraciones.<\/p>\n<p>Existe un tercer grupo, el pescado \u201csemigraso\u201d, que dependiendo de la temporada y el lugar de pesca reduce o aumenta el contenido en grasa de su cuerpo.<\/p>\n<p>Algunos ejemplos de <strong>pescado blanco<\/strong>:<\/p>\n<ul>\n<li>Bacalao<\/li>\n<li>Besugo<\/li>\n<li>Gallo<\/li>\n<li>Merluza<\/li>\n<li>Rape<\/li>\n<li>Lenguado<\/li>\n<li>Rodaballo<\/li>\n<\/ul>\n<p>Algunos ejemplos de <strong>pescado azul<\/strong>:<\/p>\n<ul>\n<li>Anchoas o Boquerones<\/li>\n<li>Chicharro<\/li>\n<li>Verdel<\/li>\n<li>At\u00fan<\/li>\n<li>Bonito<\/li>\n<li>Caballa<\/li>\n<li>Caz\u00f3n<\/li>\n<li>Palometa<\/li>\n<li>Salm\u00f3n<\/li>\n<li>Salmonete<\/li>\n<li>Sardina<\/li>\n<\/ul>\n<p>Una forma de distinguir f\u00edsicamente el pescado blanco del azul es por <strong>la forma de la cola<\/strong>: en los pescados blancos es recta o en forma de abanico; en los pescados azules es en forma de flecha, como la de estos dos hermosos Bonitos del Norte.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-large wp-image-14858\" src=\"https:\/\/serrats.com\/recetas\/wp-content\/uploads\/bonito-norte2017-1024x768.jpg\" alt=\"Bonito del Norte, los primeros de la costera\" width=\"860\" height=\"645\" srcset=\"https:\/\/www.serrats.com\/recetas\/wp-content\/uploads\/bonito-norte2017-1024x768.jpg 1024w, https:\/\/www.serrats.com\/recetas\/wp-content\/uploads\/bonito-norte2017-600x450.jpg 600w, https:\/\/www.serrats.com\/recetas\/wp-content\/uploads\/bonito-norte2017-420x315.jpg 420w, https:\/\/www.serrats.com\/recetas\/wp-content\/uploads\/bonito-norte2017-725x544.jpg 725w, https:\/\/www.serrats.com\/recetas\/wp-content\/uploads\/bonito-norte2017.jpg 1200w\" sizes=\"(max-width: 860px) 100vw, 860px\" \/><\/p>\n<p style=\"text-align: right;\"><strong>Dra.
