Retomamos el h\u00e1bito con <strong>Lu\u00eds Higuera<\/strong>, Chef colaborador de <a href=\"https:\/\/www.cocinaligera.es\/\">Cocina Ligera<\/a>, que ha cocinado y grabado en v\u00eddeo esta fabulosa Vichyssoise con tartar de anchoas del Cant\u00e1brico de Conservas Serrats, langostinos y quinoa. \u00bfTe animas a prepararla?<!--more--><\/p>\n<h2>Ingredientes para 4 personas<\/h2>\n<p><strong>Para la vichyssoise:<\/strong><\/p>\n<ul>\n<li>\u00bd kg de puerros (la parte blanca)<\/li>\n<li>1 cebolla mediana<\/li>\n<li>2 patatas medianas<\/li>\n<li>\u00be de litro de caldo de ternera<\/li>\n<li>100 ml de leche<\/li>\n<li>80 ml de nata l\u00edquida<\/li>\n<li>Sal<\/li>\n<li>Pimienta<\/li>\n<li>60 ml de aceite de oliva virgen extra<\/li>\n<\/ul>\n<p><strong>Para el tartar:<\/strong><\/p>\n<ul>\n<li>1 lata de <a href=\"https:\/\/www.serrats.com\/es\/comprar-anchoas-del-cantabrico\">anchoas del Cant\u00e1brico en aceite de oliva<\/a> de <a href=\"https:\/\/www.serrats.com\/es\/\">Conservas Serrats<\/a><\/li>\n<li>8 langostinos crudos peque\u00f1os<\/li>\n<li>Zumo de naranja<\/li>\n<li>1 lim\u00f3n<\/li>\n<li>80gr de quinoa<\/li>\n<li>Agua<\/li>\n<li>Sal<\/li>\n<li>Aceite de oliva<\/li>\n<\/ul>\n<h2>Preparaci\u00f3n<\/h2>\n<ul>\n<li>Primero, limpiamos bien los puerros y los ponemos a rehogar a fuego suave en una sart\u00e9n con el aceite caliente.<\/li>\n<li>En seguida, a\u00f1adimos la cebolla cortada en trozos al groso modo. Tapamos la sart\u00e9n y dejamos sudar durante unos minutos.<\/li>\n<li>Una vez pochada la verdura agregamos la patata cortada en cachelos, rehogamos ligeramente y sazonamos.<\/li>\n<li>A continuaci\u00f3n, a\u00f1adimos el caldo de ternera bien caliente y dejamos que cueza unos minutos.<\/li>\n<li>Mientras, pelamos los langostinos y los cortamos longitudinalmente por la mitad. Quitamos el intestino a los langostinos para dejarlos lo m\u00e1s limpios posible.<\/li>\n<li>Colocamos en una bandeja de cer\u00e1mica los langostinos y los cubrimos con el aceite de las anchoas del Cant\u00e1brico de <a href=\"https:\/\/www.serrats.com\/es\/\">Conservas Serrats<\/a> y el zumo de naranja y lim\u00f3n. Dejamos marinar a temperatura ambiente y les damos la vuelta de vez en cuando.<\/li>\n<li>Despu\u00e9s, trituramos la crema de puerros y la dejamos enfriar en un recipiente durante unas horas en la nevera.<\/li>\n<li>Cocemos la quinoa en un cazo durante 15 minutos aproximadamente a fuego medio. La proporci\u00f3n es una parte de quinoa, por tres partes de agua hirviendo con un poco de sal y aceite. Dejamos enfriar.<\/li>\n<li>Picamos muy finamente las <a href=\"https:\/\/www.serrats.com\/es\/comprar-anchoas-del-cantabrico\">anchoas del Cant\u00e1brico<\/a> de Conservas Serrats, as\u00ed como los langostinos escurridos. Agregamos la quinoa cocida.<\/li>\n<li>Envolvemos bien el conjunto en un recipiente amplio con una esp\u00e1tula de silicona. Reservamos.<\/li>\n<li>Preparamos la vichyssoise a\u00f1adiendo la leche a la crema fr\u00eda. Salpimentamos y pasamos por un colador fino. A\u00f1adimos la nata mezclando con cuidado para no montar \u00e9sta.<\/li>\n<li>Por \u00faltimo, para su presentaci\u00f3n, cogemos un plato hondo y colocamos un molde met\u00e1lico circular justo en el centro. Rellenamos con el tartar. Retiramos el molde y a\u00f1adimos la vichyssoise con cuidado.
