Se llamaba Nicolas Appert, era un repostero franc\u00e9s, y en 1810 tuvo la\u00a0feliz\u00a0idea de cocer unos alimentos,\u00a0introducirlos\u00a0en frascos de cristal, sellarlos con un corcho y alambre, y sumergirlos en agua hirviendo para completar su conservaci\u00f3n.<!--more--><\/p>\n<figure id=\"attachment_8119\" aria-describedby=\"caption-attachment-8119\" style=\"width: 150px\" class=\"wp-caption alignleft\"><img decoding=\"async\" class=\"size-thumbnail wp-image-8119\" title=\"Durand\" src=\"https:\/\/serrats.com\/recetas\/wp-content\/uploads\/Durand1-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><figcaption id=\"caption-attachment-8119\" class=\"wp-caption-text\">Durand, conservero pionero<\/figcaption><\/figure>\n<p>Aquello supuso el inicio de la t\u00e9cnica de conservar los alimentos, que ya no necesitaban de la congelaci\u00f3n o el salaz\u00f3n para conservar intactas sus propiedades. Al m\u00e9todo del envasado se le uni\u00f3 casi inmediatamente el enlatado. Esta vez fue idea de Peter Durand, un inventor brit\u00e1nico que patent\u00f3 la lata revestida de esta\u00f1o. Posteriormente se a\u00f1adi\u00f3 al agua de conservaci\u00f3n cloruro\u00a0c\u00e1lcico\u00a0 que elevaba la temperatura de cocci\u00f3n del agua por encima de los 100\u00ba. Esto aseguraba la esterilizaci\u00f3n del proceso, pero a menudo provocaba que las latas reventasen.<\/p>\n<p>En 1874 se invent\u00f3 \u00a0el proceso de recipiente cerrado, donde el vapor a presi\u00f3n sustitu\u00eda al agua hirviendo, y por fin se solvent\u00f3 el problema de los estallidos de las latas. Un hito en la historia conservera, y un alivio para los trabajadores de las conserveras, \u00a1que ya no ten\u00edan que tirarse cuerpo a tierra despu\u00e9s de cada explosi\u00f3n!<\/p>\n<p>&nbsp;<\/p>\n<p>Pues en esas and\u00e1bamos cuando un emprendedor catal\u00e1n (antepasado de ya pod\u00e9is figuraros quien) llamado <strong>Jos\u00e9 Serrats<\/strong> se estableci\u00f3 all\u00e1 por 1850 en las inmediaciones del puerto de Bermeo y fund\u00f3 una peque\u00f1a empresa conservera dedicada al salaz\u00f3n y a semiconserva de anchoas. Lleg\u00f3 a abrir varias sedes en diferentes puntos del Pa\u00eds Vasco, \u00a1y consigui\u00f3 hacerse con una peque\u00f1a flotilla para autoabastecerse! Hacia 1890 ya comenz\u00f3 a exportar parte de su producci\u00f3n a Francia y Norteam\u00e9rica<\/p>\n<figure id=\"attachment_8121\" aria-describedby=\"caption-attachment-8121\" style=\"width: 150px\" class=\"wp-caption alignright\"><img decoding=\"async\" class=\"size-thumbnail wp-image-8121\" title=\"Primera empresa Serrats\" src=\"https:\/\/serrats.com\/recetas\/wp-content\/uploads\/Primera-empresa-Serrats-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><figcaption id=\"caption-attachment-8121\" class=\"wp-caption-text\">El origen<\/figcaption><\/figure>\n<p>Desde entonces hasta ahora los art\u00edculos que ha comercializado Hijos de Jos\u00e9 Serrats \u00a0S.A. han ido creciendo, incorporando el Bonito del Norte, at\u00fan claro, mejillones, etc&#8230; Todos los productos que ya conoc\u00e9is y disfrut\u00e1is en vuestras casas.
