La explicaci\u00f3n es la siguiente:<!--more--><\/p>\n<p>En el caso de los \u00ab<a href=\"https:\/\/www.serrats.com\/boquerones\">Boquerones en vinagreta<\/a>\u00ab, inmediatamente despu\u00e9s de haber sido capturados, <strong>se congelan durante 24 horas a -21\u00baC<\/strong> con lo que los posibles anisakis que pudieran tener quedar\u00edan autom\u00e1ticamente eliminados. El proceso de elaboraci\u00f3n de la conservas de \u201cBoquer\u00f3n en Vinagreta\u201d comenzar\u00eda a continuaci\u00f3n.<\/p>\n<p>Y en el caso de los \u201c<a href=\"https:\/\/www.serrats.com\/anchoas-del-cantabrico\">Filetes de Anchoas en aceite de oliva<\/a>\u00ab, inmediatamente despu\u00e9s de la pesca, se procede a quitar tripa y cabeza a las anchoas para a continuaci\u00f3n <strong>ponerlas en salaz\u00f3n, donde van a pasar los pr\u00f3ximos 8 meses<\/strong> hasta alcanzar las propiedades y caracter\u00edsticas t\u00edpicas que todos conocemos: punto de textura, de sal, color marr\u00f3n\u2026 Pues bien, los anisakis que pudieran tener las anchoas, tambi\u00e9n morir\u00edan tras 48 horas en salmuera\u2026 \u00a1y nosotros las tenemos casi 8 meses!
