Since 1890, at Conservas Serrats we have been preparing Bonito del Norte in sauce using artisanal techniques passed down through five generations. We hand-select the finest specimens caught in the Cantabrian Sea and take care at every step of the process to preserve their flavour and quality.

Bonito del Norte, or Thunnus alalunga, is the star of our preserves. It is caught one by one in the waters of the Bay of Biscay during the summer fishing season, using traditional fishing methods. Its intense sea flavour, its light-coloured meat and its properties have undoubtedly made it the king of tunas.
At Conservas Serrats, we select only the finest specimens, cook the loins and prepare them with our own recipe for Bonito del Norte in sauce, based on a traditional formula combined with other natural ingredients that provide its characteristic colour and flavour.
Once the finest specimens have been selected, the loins are cooked and carefully cleaned; we then add our special sauce, made from our own recipe.
This sauce, based on 'escabeche', paprika and other personal touches, gives the tuna its characteristic orange colour and a unique hint of flavour, without masking the natural taste of the fish. The result: a product with the artisanal seal of Serrats.
As with all our preserves, the final sterilisation process allows for natural preservation, without additives, maintaining the tuna's firm and succulent texture, as well as its nutritional properties.
