These large mussels are artisanally prepared by expert hands, with careful handling and thorough cleaning. They’re covered with just the right amount of escabeche sauce to create a truly exquisite preserve—both in flavor and presentation. Nutritional properties of mussels

Canned mussels are rich in B vitamins (especially B12) and vitamin C. Both are essential for our immune system, the formation of red blood cells, and healthy growth and development.

Harvesting mussels

Mussels survive in colonies, whether in the wild, attached to rocks, or through mussel farming (miticulture). For this, wooden structures called rafts are built. Ropes hang from these rafts into the water, and mussel larvae attach to them and grow until maturity. They are then harvested at the ideal time.

The harvesting season runs from June to February, although the best time—when mussels are at their fattiest—is from late July through September. At Serrats, we only harvest mussels when they've reached a large or extra-large size—the most flavorful and the ones we're most passionate about!

Preparation of canned mussels

Immediately after harvesting, the mussels are brought to our factory, and the first step is depuration in seawater. We let them "drink" to release any remaining sand and ensure they are perfectly clean. The mussels are then cooked, shelled, and each one is meticulously debearded by hand. The next step is frying the mussels in olive oil. The way we fry them is another key factor that sets our mussels apart.

Once naturally cooled, each mussel is carefully placed by hand into its tin. To finish, we add an infused escabeche sauce, enhanced with a bay leaf and a couple of slices of dehydrated garlic.

Of course, this entire process is carried out right after harvesting and completed within a few hours. The result is a canned mussel of exceptional appearance—whole, flavorful, and delicious. If you enjoy them as much as we do, you'll be coming back for more.

How to store canned mussels

Canned mussels don’t require any special storage conditions. You can keep them in your pantry or cupboard. That said, once the tin is opened—if by any chance you don’t finish it—we recommend storing the mussels in the fridge, covered in their escabeche sauce, or alternatively, in olive oil. Consume within 24 hours to maintain all their properties.

For best quality, we recommend consuming them within approximately 3 months once opened.
