Albacore Tuna Fishing

At Conservas Serrats, we demand fish that have been caught respecting traditional fishing gear. The fleets of the Basque Country and Cantabria fish mainly with the live bait technique or the trolling technique.

The live bait technique is based on fishing for anchovy, leaving them alive in seawater nurseries to later use them as bait. Once the bank of tuna is located, the boat is positioned over it, and the sailors begin to massively throw the live bait next to the boat. They direct strong jets of water at the same place to simulate that the water “boils” due to the large number of anchovies. The tunas attracted by the food rise to the surface by launching themselves at the live fish or with hooks, and that is how they are captured, one by one.

In the trolling technique, the boats deploy long “perches” with hooks on both sides. The tunas follow the trail of the camouflaged bait and take the bait..

Albacore Tuna fishing is carried out in the campaign from June to October, when the specimen is at its optimal point to be caught and consumed. During this period, the boats head to the Bay of Bizkaia, where the most important nucleus is concentrated.

Elaboration of Albacore Tuna

Our canned Albacore Tuna is made following a careful artisanal process, which has been learned and improved over five generations.

The first phase of all is the selection at the port of the best, freshest specimens of Albacore Tuna.

Once at the factory, we remove the viscera and head and cook them in salted water for approximately 3 hours, depending on the size of the Albacore Tuna. Once they have cooled to room temperature, we begin the cleaning phase. This phase, by hand, is essential. The skill and experience of expert hands manage to remove the skin, thorns and dark areas, achieving white and intact loins. This is what makes our canned Albacore Tuna have that exceptional appearance and the tasty and appetizing taste that they boast.

After cleaning the loins, with great care and delicacy we place this delicious seafood product in cans or glass jars. Next, we add the specially selected olive oil or one of our sauces.

Finally, one of the most important phases of the process is carried out, which is sterilization. This guarantees that the Albacore Tuna will be preserved in perfect condition and will maintain its nutritional values with absolute purity. From this moment, the product will be ready to travel from our factory in Bermeo to your table.

How to preserve Albacore Tuna

Canned Albacore Tuna does not need any special conditions for its maintenance. You can store it in the pantry or in a closet. Of course, once the can or jar of Albacore Tuna has been opened, we recommend keeping it in the refrigerator, covered in oil, and consuming it within three or four days.
