The ‘Albacore Tuna’ or ‘Thunnus Alalunga’ is caught, one by one, in the Cantabrian Sea, in the waters of the Bay of Biscay during the summer coastal fishing season, using traditional fishing methods. Its intense taste of the sea, its clear flesh and its properties have undoubtedly made it the king of tuna.

Once the best specimens have been selected and the cooking process has been completed, the fish is prepared and packaged using traditional techniques. The skill and experience acquired over five generations is part of our secret to achieving the exceptional appearance and flavour, with tasty and appetising white meat, that characterise our preserves.

For the preparation of the Neck or Cogote preserve, we exclusively use the upper part of the loin of the Albacore Tuna. We are one of the very few canners that prepare it and offer it to our customers. We really love it and, together with the Belly or Ventresca, it is the part of the fish that has the tastiest meat and the smoothest texture. We always clean and prepare it by hand and once we have put it in the can or jar, we add a specially selected olive oil. We choose a high quality olive oil with a mild flavour to give it a light aroma and that delicate texture that is so characteristic, but which maintains the genuine flavour of the Albacore Tuna Neck.

It is also important to highlight that our Albacore Tuna Neck is not only delicious, but also a nutritional gem, as it provides your body with proteins of high biological value, healthy fats (omega 3), vitamins and minerals.

One last practical tip, once you open the can or jar of Cogote, and in the very unlikely event that you do not finish it, we recommend you store it in the fridge covered in olive oil and consume it within 3-4 days.
