Bonito del Norte, also known as Thunnus Alalunga or White Tuna, is the highest quality fish in the tuna family.
During the summer, Bonito del Norte migrate in large shoals to the Cantabrian Sea where they are caught during the so-called 'costera del bonito' (tuna season).
The body of the Bonito del Norte is streamlined and protected by scales.
The back has a characteristic dark blue colour, with a greyish, shiny belly.
It is distinguished by its long pectoral fins.
Nutritional properties of Bonito del Norte
Bonito del Norte is one of the oily fish that provides the most health benefits.
By eating it, we acquire a multitude of vitamins, proteins and minerals.

The very first stage is the selection of the finest Bonito del Norte specimens at the quayside. The very freshest.
Once at the factory, the fish are gutted and the heads removed, then cooked in salted water for approximately 3 hours, depending on the size of the tuna. Once they have cooled naturally, we begin the cleaning stage. This stage, carried out entirely by hand, is crucial. The skill and experience of our expert workers ensure the skin, bones and dark areas are perfectly removed, resulting in whole, white loins. This is partly what gives our tinned Bonito del Norte its exceptional appearance of white, flavourful and appetising meat that has graced so many tables.
After cleaning, the loins are ready and, with great care and delicacy, we pack this delicious seafood product into tins or glass jars. We then add specially selected olive oil or one of our sauces.
Finally, one of the most important stages of the process is carried out: sterilisation. This ensures that the Bonito del Norte is preserved in perfect condition, retaining all its nutritional value. From this moment on, the product is ready to travel from our factory in Bermeo to your table.
Tinned Bonito del Norte does not require any special storage conditions. You can keep it in a pantry or cupboard. However, once a tin or jar of Bonito del Norte has been opened, we recommend keeping it in the fridge, covered in oil, and eating it within three or four days.
