Pack GILDA
The “Gilda” is one of the most emblematic pintxos (snacks) of the Basque Country. Therefore, inspired by one of the treasures of our pubs, we wanted to create this pack. We have combined our most emblematic Serrats preserves with some delicious olives and piparras so you can enjoy this experience. In addition, to make excellent “gildas”, the key is to choose ingredients of the best quality.

This box contains all the ingredients and elements necessary to make delicious gildas. It is made up of a selection of the best preserves from the Cantabrian Sea: Cantabrian Anchovy Fillets, tuna loins in olive oil and pickled, olives, Ibarra piparras, skewers and a guide to inspire you.
Tuna loins. This "Thunnus Alalunga" is captured, one by one, in Cantabrian waters during the summer coastal season. The loins have been handcrafted in an artisan way and we have added two toppings so you can choose which one you like best with your gildas: a mild olive oil to maintain its genuine and delicate flavor and a pickled sauce, also mild, and that pairs to perfection with the rest of the ingredients.
To prepare our canned Cantabrian Anchovies, we only use the highest quality anchovies, Engraulis Encrasicholus, caught in spring and in the Cantabrian Sea. Freshly brought from the market, we salt them and after a few months, when they have acquired their characteristic brown color, we take them out and clean them thoroughly by hand. Perfectly clean and “shaved”, we cover them with soft olive oil. An exquisite delicacy.
Piparras in BIO Eusko label oil “Agiña”. Ibarra chili pepper with the Eusko Label quality seal and the organic seal. On a sensory level, when using undisclosed white wine vinegar, the tannins give the vinegar a sweeter flavor.
The Ibarra or Piparra Chili Pepper does not sting and offers a mild flavor. It has a yellowish green color, its skin is thin and its flesh is tender. They are only found in the Basque Country due to its geographical and meteorological conditions.
