p>Yellowfin Tuna (Thunnus Albacares) is a migratory species. Its habitat is the Tropical and Ecuatorial seas and because of the abundance of the species is the fish most often used in preserves. Yellowfin tuna is similar to the Albacore Tuna but more yellowish; its meat is not so delicate and it’s less appreciated.

Once we have selected the best fishes, we cooked them and, following a meticulous and handmade process, the Yellowfin Tuna is prepared and packaged. The skill and experience acquired over five generations is the key of the exceptional taste and appearance of our preserves.

For the preparation of this tin of “ventresca”, we use the part of the Yellowfin Tuna with the softest and most delicate texture. The “ventresca” is the area located in the lower part of the fish, near the head, and is undoubtedly the juiciest and tastiest part. The Yellowfin Tuna Belly is a real luxury within the canned Yellowfin Tuna. Finally, we add our specially selected olive oil. This oil, with its intense flavour, adds an exclusive aroma and flavour to our tuna.
