We work with yellowfin tuna selected for its quality and freshness, and we prepare it following the traditional method that has defined our preserves for decades.

We use high-quality olive oil to enhance the natural flavour of the fish, which also gives it great nutritional value. As a result, we can offer a product that is tasty, with a firm texture and no additives.

We select only the tuna that meet our criteria for freshness and size, and once at the factory, we manually remove the parts that do not contribute to quality: viscera, head, skin and bones.

After cooking them in salted water, we let them cool naturally and begin a completely manual cleaning process, from which perfectly clean, whole loins are obtained.

This artisanal work continues in the packaging process: each piece is placed by hand into a tin or glass jar, and is topped with carefully selected olive oil or our own sauces, before moving on to the final sterilisation phase.

All this care ensures that the yellowfin tuna retains its flavour, texture and properties, offering a preserve that faithfully reflects our respect for fishing tradition.

The yellowfin tuna we use in our preserves is Thunnus albacares, a migratory species that is mainly caught in tropical and equatorial waters. This species, known for its balanced flavour and firm texture, is perfect for preserving.

After being caught, the tuna is frozen on board to maintain its full quality until it reaches the factory. From there, we apply a rigorous selection process, based on our preserving experience, where we particularly value the freshness and appearance of each piece.

This care from the source allows us to offer a tasty product made with respect for the raw material, as we do with our entire range.

Tinned light tuna is not, never has been and never will be an inferior version of fresh fish. When it's prepared well, with care and attention, it is able to retain all the proteins, omega-3 fatty acids and minerals that make it just as nutritious.

It also has clear advantages: it keeps for longer, needs no preparation and is always ready to use. For many everyday recipes, a good quality tinned product is a practical and tasty option that fits perfectly into your lifestyle without compromising on quality.

While the tin is unopened, the light tuna can be stored in a larder or any cool, dry place, without needing any special conditions.

Once opened, if you don't use it all, it's important to transfer the contents to a clean container, cover the tuna well with its own oil and keep it in the fridge. It should ideally be eaten within 3 to 4 days to enjoy its full flavour and freshness.
